Over the last two years, very few coffee estates have been as open to innovative and experimental processes as the Salawara Estate. Sharan has constantly been pushing the envelope with some incredible coffees produced through great farming and processing techniques. We have been working with Sharan every year since we started and this year we had the fortune of visiting him during the harvest season and checking out what he’d been up to in those fabulous “Poly-mansions”! As we strolled across the many incredible lots set out for drying, one lot just smelled incredibly intense and super fruity. That was the carbonic maceration, which was the lot we knew we just had to get!
This light roast has everything that drew us to it when we first got its sweet whiff. A lovely golden apple sweetness, with juicy prunes and milk chocolate notes. This coffee is one of the sweetest light roasts we’ve had this year and it makes a yummy filter and super funky espresso!
