The Bison Valley Estate in Yercaud is part of the MSP Coffee family, producing some extraordinary coffees over the last few years. They are also the first farm we ever bought speciality coffee from, so we hold a very special place in our hearts. We’ve received some truly memorable coffees from them in the past, and this year this Naturals from the Bison Valley stole our heart on the first slurp. Grown at 1370 MASL, these SL9 cherries underwent a double fermentation before they were dried for 32 days. Although Navin hasn’t shared the exact fermentation design (hence the name - Deep Dark Secrets) it’s a process they have developed over the last 2 years and have used it only for the best coffees.

Naturally processed coffees from Yercaud are quite special and this has the ideal traits of a Yercaud naturals. With notes of berries, a jammy citrus acidity, and the sweetness of dried figs, this coffee is one of the most complex coffees we’ve tasted this year. The highlights for us are the bright, fruity notes that are very clear in the cup and the jammy mouthfeel coats the palate and leaves a sweet lingering aftertaste. We love this coffee as a pour-over and thanks to how sweet this one is, this makes incredible espressos and goes really well with milk as well.
