This is one of the coffees that absolutely blew us away when we had it sitting with Aslam and Pierce from The Community Coffee, in their Chinatown location which also serves as a co-roasting facility. And it was hardly a surprise since this comes from the incredible Diego Bermudez's farm in Cauca, Colombia. This special washed process from El Paraiso, is truly truly special. The coffee went through a 2 stage fermentation, in which the cherries were pulped in between. This coffee is intensely sweet, with notes of Grape Jelly, Strawberry Cream, the syrupy acidity that's akin to Canned Peaches and an elegant floral note to complete the experience.

The Community Coffee source and roast some incredible coffees, and their place also serves as an incredible co-roasting space for other roasters to come and roast their own coffees.
