Kelachandra coffee have been stepping up in their speciality coffee offerings year on year, and this year some of their lots were just super. This washed Red Catuai was one of the nicest washed coffees we tried this year, and we can't wait for you all to get a sip of this super complex coffee.
Being a relatively lower in elevation, the team has to work very hard, and has to be diligent in the fermentation and the drying to ensure that the coffee tasted sweet, bright and complex, just the way we like it. For this Red Catuai, the coffee cherries were picked ripe, cleaned and then fermented in water for 24 hours before the cherries were pulped and then fermented in tiled tanks without water for another 24 hours. The mucilage was then washed off three times before the coffee was dried on raised beds for 12 days.
We've been really enjoying washed coffees recently, and this one is a really great option for those want a clean, bright structured cup. We get notes of Red Apple, Cocoa and a lingering black tea finish
