Sharan and Ishwar Gowda have been producing some truly stellar coffees over the last few years, and each year we're just blown away by how they keep making their coffees taste better. Is it more data, more knowledge, better infrastructure, just more experience? We're not sure, and honestly, as long as they're producing coffees like these, we're just happy that we get to have them with us.
Fermentation in coffee has blown up in the last few years. Bio Reactors are closed tanks designed for anaerobic or low oxygen fermentations. They allow you to control variables such as temperature, pH, time, pressure and allow inoculation with yeasts and other microbes. Using a bio-reactor, Sharan and his team were able to produce some great coffees this year, but what's more important is that through this they'll be able to consistently replicate these processes year on year.
For this Naturals, Chandragiri cherries were picked ripe, cleaned, give a float test and were put in the bio-reactor to ferment for 36 hours. The cherries were inoculated with yeast during the fermentation. They were then dried over 26 days with tremendous attention to the temperature and humidity around the batch. The Result is fruit forward, but super complex coffee with notes of Pineapple, Bright Citrus Fruits, and a cocoa finish.
