This fruity honey processed coffee from the Udaigiri Estate has been one of the coffees that we have been really looking forward to put out and we couldn't think of a better coffee to kickstart the new year. A clean, bright, fruity coffee, with the hopes of a bright, fruitful new year!
This honey processed coffee was grown at an elevation of 1250 MASL, and once the cherries were bright red and ripe they were harvested, cleaned, and fermented in open environment for 48 hours, while being carefully monitored and raked. They were then pulped precisely to leave a specific amount of mucilage to bring out the fruity notes that we love with a honey processed coffee and were dried for 22 days on raised beds.
We roasted this light to retain it's bright flavour, and bring out the sweetness of Red Apple, fresh stone fruit acidity, all balanced with a malt-like finish.
